Julio opened his restaurant, Julia, almost three years ago, just five months after the most important Julia in his life, his daughter, was born.
The restaurant is already one of THE places in Buenos Aires. This beautiful small space at Loyola 807, Villa Crespo, offers signature and seasonal cuisine, uses noble agro-ecological products, and creates each dish with great dedication.
At first, he did everything – cooking, greeting diners, and handling logistics. Today, there are seven on the team, but he confesses that he cannot stay away from the kitchen, as it is his passion. He is there to take care of every detail, it is still a craft, and it follows the "less is more" philosophy.

 

 Báez is disruptive, an indie chef.
For starters, his restaurant closes on Saturday and Sunday, the two days when people go out to eat the most. "The diners who go out during the week enjoy the experience more," he assures. And it only opens at night. What determined these hours is Julia. He doesn't want to give up having dinner at home two nights, nor weekends with his family, nor picking up Julita from kindergarten. 

 

JuliaxPosco is born from sharing these values with him: dedicating time to everything we do, craftsmanship, details, and quality.
